INGREDIENTS:

BIG MAC SAUCE:

  • A teaspoon of mustard(yellow)
  • 1/4th tsp of powdered garlic
  • Keto mayonnaise, two tbsp.
  • 0.5 teaspoon of vinegar, white
  • Tomato paste/ketchup(sugar-free), one tsp.
  • 0.25 teaspoon of powdered onion
  • Sugar-free dill pickle, one tsp.

FOR CHAFFLES:

  • A tablespoon of almond flour
  • 1 egg, big
  • Half a cup of cheddar cheese, grated

FOR FILLING:

  • 2/3 slices of dill pickle
  • Beef(ground), one-third lb.
  • 1 tablespoon of lettuce, grated
  • To taste of powdered black pepper & salt
  • 1 slice of cheddar cheese
  • Diced onions, 1 tbsp.

INGREDIENT NOTES:

PICKLE RELISH:

  • If you are using the pickle relish, read the label with a focus on buying the sugar-free version. Otherwise, use chopped dill pickles as an alternate.

CHEESE FOR CHAFFLE:

  • Use either mozzarella or cheddar cheese. You may also use the blend of both cheeses. It will also work fine.

LETTUCE:

  • Fresh leaves of lettuce will add a great crunch. Use either romaine/iceberg lettuce.

FLOUR OF ALMOND:

  • It is not a compulsory item. We are using it here to add stability to our chaffles. You may drop it for a no-carb version.

BEEF (GROUND):

  • Use beef with 80% of lean meat along with 20% of fat. This will make your dish juicy without drying it out.

INSTRUCTIONS:

CHAFFLE MAKING:

  1. Plug in your waffle maker, then start your work.
  2. Grab a bowl & include cheddar(grated), egg, & flour of almond.
  3. Mix all of them well to have a smooth paste.
  4. Use a silicon brush or non-stick spray to apply a layer of oil on the waffle iron.
  5. Pour the half mixture & shut the waffle maker.
  6. It will take around three mins to have a nice golden & firm chaffle.
  7. Repeat the process for another chaffle.
  8. Set the chaffles aside to get firmer once you have finished making them.

PREPARATION OF BIG MAC SAUCE:

  1. Grab a little bowl & gather all the items for making the keto version of the Big Mac sauce.
  2. Include mustard(yellow), powdered onion, keto homemade mayonnaise, powdered garlic, ketchup(sugar-free), vinegar, & pickle relish in that bowl.
  3. To create a smooth sauce, combine them all.

BEEF PATTY COOKING:

  1. Sprinkle the salt & powdered black pepper on the beef(ground).
  2. Mix the beef well so that it is seasoned properly.
  3. Shape a thin patty approximately the size of your chaffle.
  4. Keep the skillet on a normal-high flame.
  5. Place the patty on the heated skillet.
  6. Cook for around four minutes before flipping.
  7. Then, flip & cook the other side for another four minutes.
  8. Before dishing it out, place the cheddar slice over it so that it melts in the last minute.

ASSEMBLING OF OUR BIG MAC SANDWICH:

  1. Place one chaffle as the base of the sandwich on an empty serving plate.
  2. Put some of the Big Mac sauce you have made earlier & then spread it.
  3. Start layering of the lettuce, pickles, onions(diced) & the beef patty(cooked) over one another.
  4. Spread some more sauce over the beef patty.
  5. Close the sandwich with another chaffle.
  6. Your Keto Big Mac Chaffle is ready to serve warm!

TIPS:

  • You may regulate the amount of mustard/vinegar or both to have your personalized Big Mac sauce.
  • Before assembling, let the chaffle cool on the rack(wire) so it will be crisper.
  • Place the lid to cover the skillet as you place the cheese slice over the patty to melt. This covering will melt the slice very well.
  • It is not compulsory to use beef with 15% or 20% fat. This practice will have you the juicy patty. If you want lower fat content, then totally lean meat will also work best.

  • We suggest that you always assemble & eat Keto Big Mac Chaffle fresh. Still, you want to store the leftover, You have a maximum of 24 hours to store it in the refrigerator.

FREEZING:

  • Freezing is only recommended for chaffles as they can get back into their original crispiness after reheating.
  • Once all the moisture has been evaporated from your chaffle, stack them over one another with paper(parchment) in between.
  • Keep those stacked chaffles in a jar, container, or bag. The container you will use must be sealed properly & safe for the freezer.
  • Mention the date before freezing it & don’t use them after fifty days.

NOTE: The crispiness of keto toppings & the texture of sauce will be ruined after the freezing & defrosting process. It’s best to assemble your chaffles with fresh sauce & toppings & also consume them fresh.

  • No! we don’t recommend freezing the fully assembled Big Mac chaffle. As the texture of Big Mac Sauce & crispiness of lettuce and other toppings will be ruined. It’s best to serve/eat the freshly assembled chaffles sandwich each time.
