INGREDIENTS

  • Olive oil, 3 tablespoons
  • 1/2 tablespoon Italian seasoning
  • 1/8 teaspoon salt with garlic
  • (cut into cubes of 1 inch)1 pound of chicken breast
  • 1 pepperoni, 4 oz.
  • 1 bell pepper sliced
  • 12 finely sliced white onion
  • Sliced black olives, 1/4 cup
  • 1 cup of tomatoes, smashed
  • 2 cups of low-moisture mozzarella shredded

INSTRUCTIONS

  1. Set the oven to 400° F.
  2. A cast iron skillet(10.5-inch) with medium-high heat is used to heat the oil. Italian seasoning and garlic salt are used to season the chicken. The chicken should be browned and fully cooked after 3–4 minutes of searing on each side.
  3. Cook the remaining ingredients for 2-3 minutes, until the vegetables begin to soften, omitting the cheese. Add cheese on top.
