EQUIPMENT:

  • A baking sheet
  • Oven 1
  • 3 sheets of parchment
  • Rolling pin 1

INGREDIENTS:

  • 1/2 cup of coconut flour
  • Grated mozzarella cheese, 1 cup
  • One-fourth teaspoon of salt.
  • 2 eggs (large)

INSTRUCTIONS:

  1. Pick a baking sheet and cover it with a sheet of parchment.
  2. Switch the oven on & rotate it’s temperature knob to set it at 177 C.
  3. Heat the cheese till it converts into a smooth melted liquid.
  4. Pick a large bowl and add flour of coconut, salt, and eggs.
  5. Fix the dough blade to your food processor.
  6. Run it to combine it well.
  7. Add melted cheese but it will be hot so keep that in mind if kneading with your hands.
  8. Knead the dough by mixing well.
  9. Chill for a short while so the dough gets firm & less sticky.
  10. Then use 2 sheets of parchment to roll it.
  11. Roll the dough till it is 1/16th-inch thick from all the sides.
  12. Remove the upper sheet and cut the rectangles of the standard biscuit size.
  13. Make little holes as a design so that it prevents bubbling.
  14. Arrange the dough of cut crackers on the prepared sheet for baking.
  15. Insert the tray into the oven & set the knob of the timer to fifteen minutes.
  16. When you hear the bell ring indicating the end of the timer, then switch the oven off & open the door.
  17. Leave the tray in the hot oven with an open door for 30 or 35 minutes.
  18. This will get you the even crispier crackers.
  19. Your coconut crackers are ready.
  20. Serve them upon cooling along with your favorite keto dip.

TIPS:

  1. To get even crispier crackers, you should leave the baked crackers in the hot oven with open doors.
  2. Use your hands as well to knead the dough.
  3. Chill the dough before rolling to avoid sticking.
  4. Make little holes so that it won’t bubble.
  5. You may use a pizza cutter to make cutting more convenient.

STORAGE INFORMATION:

  1. These crackers will be fine in a cool, and moisture-free environment. Use them for a week.
  2. You may store the coconut crackers in the fridge if you want to keep them safe for a longer period. The fact is that fridge/freezer will make them soft/moist.
  3. You may crisp them up again in the oven if they catch moisture anyway.

Coconut crackers continue browning even after we remove them from the heated oven. If we bake them completely, they will burn when we turn the oven off. This is the reason we have to half-bake the crackers and then leave them in the switched-off oven with open doors.
