WHAT ARE MISSISSIPPI MUD BARS?

You may have heard of Mississippi Mud Pie and Mississippi Mud Cake. There are so many variations of this theme. It’s often some sort of mash up of whipped cream, chocolate pudding, with a brownie base, and chocolaty flavors.

Ingredients

  • ½ cup butter
  • ½ cup unsweeted almond (hemp milk)
  • ⅓ cup cocoa powder
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 cup almond flour
  • ½ cup Swerve Brown
  • ½ teaspoon baking soda
  • (about ½ batch) 2 cups chopped keto marshmallows
  • ⅓ cup chopped toasted pecans

Chocolate Frosting

  • 6 tablespoon butter
  • 6 tablespoon heavy whipping cream
  • ¼ cup cocoa powder
  • ½ teaspoon vanilla extract
  • ½ cup powdered Swerve Sweetener

Instructions

  1. Preheat the oven to 325F and take a 9×9 square metal baking pan and grease it.
  2. Take a saucepan and combine the cocoa powder, almond milk, and butter over medium heat, whisking frequently until the the cocoa powder is well mixed in and butter is melted.
  3. Take it out from heat and whisk in the vanilla and egg, then stir in the baking soda, sweetener, and almond flour.
  4. In the prepared pan, spread the batter and bake 25 to 30 mins, until it gets just set. Remove and let cool about ten mins, then sprinkle with the the toasted pecans and chopped marshmallows.

Chocolate Frosting

  1. Take a saucepan combine the cocoa powder, whipping cream, and butter over medium. Bring to a boil and let heat one min, whisking frequently.
  2. Take it out from heat and whisk in the sweetener and the vanilla extract until it gets smooth.
  3. Pour over the bars.
  4. To help set the chocolate, refrigerate one to two hours before cutting into bars.
