Keto Pepperoni Pizza Casserole. Try this Low Carb / Keto Pepperoni Pizza Casserole if you want an easy casserole dinner that can be thrown together in no time. I mean who doesn’t love a pizza? And it doesn’t mean you have to give it up being on a low carb diet! Let’s dish (literally) about some low carb pizza goodness!

We chose pepperoni but you can make any kind of pizza casserole you want. It’s the family favorite. A kids’ favorite. And you know, to get kids to eat the right foods, we’ll do whatever it take!

To this low carb pepperoni pizza casserole, adding cauliflower rice makes it easy to get kids to eat their veggies! Additionally, adding a bit of cauliflower rice is a good way to hide vegetables in a recipe on a keto diet. They’ll never know! This casserole is layered with pepperoni, sautéed ground beef and onions, tomatoes, cheese and cauliflower rice. In this recipe, we’ve added some optional spices, as usual, our homemade Italian seasoning.
To bake – 30 minutes at 400 degrees doesn’t take long. And leftovers are fabulous.

You can make your own pizza sauce if you don’t want to add tomatoes/prefer a sauce. Actually, because I’m not a garlic person (shock!), I usually make my own, and I like to control my flavors. Ingredients

  • 1 10 oz bag cauliflower rice, cooked
  • 1 lb ground beef, cooked
  • ONE small chopped yellow onion
  • 1 14 oz can diced tomatoes, drained
  • 2 cups shredded mozzarella cheese
  • 2 oz sliced pepperoni
  • 1 Tbs Italian seasoning

Instructions

  1. According to instructions, cook the rice. To remove excess moisture, pat it between paper towels.
  2. In a pan, brown the beef and onion until it gets cooked.
  3. Layer the pepperoni, cauliflower rice, tomatoes, Italian seasoning, cheese and beef mixture in a 13×9 baking dish.
  4. For 25-35 minutes, bake at 350 degrees.
