Ingredients

Pastry Dough:

  • ▢1 ⅓ cups almond flour
  • ▢1 ½ teaspoon coconut flour
  • ▢2 tablespoon cold butter
  • ▢1 ½ teaspoon cold water
  • ▢1 egg
  • ▢pinch salt

Strawberry Filling:

  • ▢1 cup strawberries
  • ▢2 tablespoon Joy Filled Eats Sweetener
  • ▢¼ teaspoon vanilla/lemon extract
  • ▢¼ teaspoon xanthan gum

Blueberry Filling:

  • ▢1 cup blueberries
  • ▢2 tablespoon Joy Filled Eats Sweetener
  • ▢¼ teaspoon vanilla/lemon extract
  • ▢¼ teaspoon xanthan gum

Brown Sugar Cinnamon Filling:

  • ▢½ cup brown sugar sweetener
  • ▢¼ teaspoon cinnamon
  • ▢¼ teaspoon xanthan gum

Icing:

  • ▢¼ cup powdered erythritol
  • ▢1 tablespoon butter softened
  • ▢1 tablespoon almond milk

Instructions

Crust:

  1. In a food processor, combine the crust ingredients and pulse until the dough forms a ball. This may take TWO to THREE minutes. While you make the fillings, chill the dough.

Fillings:

  1. Heat the berries and sweetener, to make the strawberry and/or blueberry filling over medium heat until the sweetener dissolves. Until it gets smooth, transfer to a blender(small) or food processor and process. Add the xanthan gum.
  2. Simply stir together the ingredients, to make the brown sugar cinnamon filling.

Assembly:

  1. Preheat the over to 350.
  2. Between two pieces of greased parchment paper, roll out the dough. With a pizza cutter, cut rectangle(2×3 inch). Until it is all used up, reroll the extra dough and make more rectangles.
  3. On a cookie sheet, place one piece of the parment you were using. To the prepared baking sheet, gently transfer half of the rectangles.
  4. With a tablespoon of filling, top each of the bottom rectangles. Cover with a top rectangle.
  5. With your fingers, press the edges together. In the top of the pastry, use a fork to poke a few holes and to crimp the edges.
  6. Until golden brown, bake for 15-20 minutes. (if desired)Top with icing and sprinkles.

Icing:

  1. Mix together butter and powdered sweetener. Until you reach a spreadable consistency, thin with almond milk a little at a time. On the cooled pop tarts, spread.
