INGREDIENTS:

BASE:

  • 2 cup almond meal
  • One Egg
  • Two ounces Butter
  • One pinch Salt
  • Two pinch White Pepper

FILLING:

  • Four slices bacon diced
  • ½ Brown Onion cubes
  • Five ounces Gruyere Cheese grated
  • Three eggs
  • One & ½ cups Light Whipping Cream
  • A teaspoon Dijon Mustard
  • One pinch Salt
  • 2 pinch White Pepper

INSTRUCTION:

MAKE THE BASE:

  1. Heat the oven to 170 degrees C or 340 degrees F.
  2. Put the medium mixing bowl on the shelf and add the almond meal, eggs, salt, butter, & black pepper powder in it and mix them well.
  3. Transfer the almond meal and butter mixture to the quiche dish and press it evenly into the dish.
  4. Bake the base of the quiche for around twelve minutes.
  5. If the base of the quiche starts to rise then prick the base with the fork to release the air bubbles.
  6. When it is done; take the crust out & put it on the corner.

MAKE THE FILLING:

  1. Put a saute pan on the stove on medium heat and warm up.
  2. Include the dice of bacon and onions in the pan.
  3. Saute them till the onions get translucent and the bacon gets crunchy.
  4. Transfer the bacon & onions on the quiche base & divide it evenly on it.
  5. Then drizzle the shredded gruyere cheese over the bacon & onions.
  6. Take a large bowl and add black pepper powder, cream, mustard, salt, and eggs, and blend all the ingredients with a stick blender to form a smooth sauce.
  7. Carefully transfer the creamy mixture to the bacon, onions, & cheese.
  8. Bake the quiche for twenty to twenty-five minutes or till the center of the quiche will not jiggle.
  9. Put it out of the oven and set it aside for 4-5 minutes before you eat.
  10. Slice the quiche and enjoy.

SERVING IDEAS:

  • We can serve this quiche Lorraine with Arugula & avocado salad, spinach & bacon salad, and also with fresh green salad.
  • This Keto quiche is also served with low-carb roasted asparagus, sautéed green beans, or with roasted cauliflower, or cauliflower rice.

TIPS:

  • Carefully mix the crust just enough to get everything combined but do not overmix all the ingredients because it can make the crust tough.
  • Utilize freshly shredded cheese it will enhance the taste as well as it will melt more properly than pre-shredded cheese because it contains an anti-caking agent which will affect the melting of the cheese.
  • Eggs should be at ambient temperature or else they will not properly combine with the other ingredients.
  • If you want to make the crust crunchier then bake the crust empty for a few extra minutes; in this way, the crust will not get moist when you add the filling.
  • Try not to over bake the quiche. Take it out when the center still jiggles slightly as it will continue to cook out of the oven as well for some time.
