INGREDIENTS:

  • 1 tbsp. + 2 tsp. olive oil
  • 1 medium-large sweet potato

INGREDIENT NOTES:

OLIVE OIL:

  • Add the olive oil to the pan to toss the vegetables and make a tastier foundation for the dish. It will also provide good fat content.

SWEET POTATO:

  • Add the sweet potato to make the dish colorful and also include softness and a sweet taste. We have to peel and cut it into small, equal-sized dice so they cook in equal time.

ONION:
