 2 tbsp butter or olive oil divided
 1 ½ lbs chicken thighs cut into ½ inch pieces
 ½ tsp salt
 ½ tsp pepper
  cup chopped sun dried tomatoes
 4 cloves garlic
 1 tbsp tomato paste
 1 tsp Italian seasoning
 4 cups chicken broth
 8 ounces cauliflower florets
 6 ounces fresh spinach
 ½ cup heavy whipping cream
 ½ cup grated Parmesan cheese

Add ONE tbsp. of the butter to a Dutch oven that is heated to medium. Salt and pepper the chicken while it's heating.
