INGREDIENTS:
FOR THE CARAMEL CENTER:
- 1/4th cup of butter
- Cream(heavy), 0.5 cup
- 1 tsp. of vanilla essence
- Keto sweetener, one-third cup
- A little bit of salt
CHOCOLATE COATING:
- A tablespoon of butter/coconut oil
INGREDIENT NOTES:
BUTTER:
- Although we can make the caramel without butter, adding butter will give us the enhanced flavor & your choice of color, along with soft & smooth caramel. You may go for the vegan butter or ghee as a replacement.
ESSENCE OF VANILLA:
- The essence of vanilla adds a very nice aroma that complements & enhances the flavor perfectly. Regarding this dessert/snack, you might use caramel essence instead.
CHOCOLATE CHIPS:
- We are going to use the sugar-free chocolate chips by melting them along with the oil of coconut. If you didn’t get the sugar-free version of chocolate chips, then go for 90% of dark melted chocolate.
CREAM(HEAVY):
- It makes your caramel rich. You may also go for full-fat & canned cream of coconut for the vegan version. This will also have you the creamy & rich truffles.
KETO SWEETENER:
- We advise you to use the powdered monk fruit/erythritol. The powdered version will give you the best results. You may also go for the Allulose/xylitol as well

INSTRUCTIONS:
- Include the butter, cream(heavy), & sweetener in the saucepan.
- Place the saucepan over a normal flame & start stirring.
- The mixture will begin to turn golden after a few moments.
- Once the caramel is golden, extinguish the flame.
- At this moment, include the little salt & essence of vanilla to finalize our caramel.
- Refrigerate it once it comes to the surrounding temperature.
- It will take roughly 30 minutes to solidify.
- Take out the chilled caramel & separate the portion using a scoop.
- Roll the separated caramel portion to make a ball.
- Keep that ball on the tray(lined with parchment).
- Similarly, make the balls of the whole caramel.
- Then transfer the tray with caramel balls to the freezer to set.
- Meanwhile, melt the chocolate chips along with the oil of coconut using a double-boiler.
- Mix well to have a smooth dipping chocolate.
- Grab a caramel ball using a fork & dip it in the dipping chocolate.
- Keep that ball back in its place.
- Similarly, coat all the balls.
- Then shift the chocolate-coated caramel truffles back to the refrigerator to set.
- At least fifteen minutes will be needed.
- Then, your Keto Chocolate caramel Truffles are ready to serve!
TIPS:
- To make the caramel easy to roll into balls, chilling is necessary. If your caramel is too soft, then it needs to be frozen for better rolling.
- Never go for the grainy sweetener; otherwise, you will have a non-smooth caramel.
- You may create the flavor variations by including the essence of hazelnut/caramel, sea salt, espresso powder, etc.
STORAGE DETAILS:
REFRIGERATION:
- Pack the chilled, chocolate-coated truffles in a jar(airtight). Keep that jar refrigerated & consume the caramel truffles within ten(10) days.
FREEZING:
- Once set, pack the truffles as directed above. Freeze them for ~ sixty days, & consume them within the stipulated time. You only need to defrost them for ~ half an hour.
FAQs:
May I change the coating?
- Absolutely! You can cover the caramel balls in cocoa powder, coconut(shredded), & crushed nuts.
What might be the reasons that my caramel doesn’t thicken?
- You need to cook the caramel more patiently to evaporate all the moisture while stirring continuously. Xylitol & allulose give a better caramelization than erythritol.
