High-Protein Stuffed Peppers with Frozen Fried Rice

These High-Protein Stuffed Peppers with Frozen Fried Rice are a nutritious dish. It is prepared in 50 minutes, perfect for a quick lunch or dinner. It contains scallion slices, different-colored bell peppers, sesame seeds, frozen fried rice, seasonings, water, sesame oil, soy sauce, & Chile garlic sauce. We would easily store these stuffed peppers for some time in the fridge, and it is best to store them without baking in the freezer for the best texture. Serve these High-Protein Stuffed Peppers with Frozen Fried Rice, miso soup, steamed broccoli, or Greek yogurt. This dish has sesame items in it, so be careful if you have a sesame allergy.

INGREDIENTS:

  • 4 multicolored bell peppers — medium
  • ¼ tsp. salt
  • ¼ tsp. ground pepper
  • 1 tbsp. toasted sesame oil
  • 1 package frozen vegetable fried rice
  • One cup scallions
  • ¼ cup water
  • 2 tbsp. lower-sodium soy sauce
  • 2 tsp. garlic powder
  • 1 tsp. chile-garlic sauce
  • One package frozen shelled edamame
  • Sesame seeds

INGREDIENT NOTES:

FROZEN VEGETABLE FRIED RICE:

  • Use the 16-ounce pack of the frozen vegetable fried rice, which is good to serve three to four people. It contains corn, peas, rice, and carrots; it depends on the brand.

EDAMAME:

  • Add the shelled edamame to this stuffed pepper filling to add protein to it. It provides a complete protein in the dish with 18g protein in one cup.

BELL PEPPERS:            

  • Utilize the Multicolored bell peppers like yellow, red, & orange to offer rich and sweet flavors in the dish. It will also provide more vitamin A & C than the green ones. 

CHILE-GARLIC SAUCE:

  • Include the chile-garlic sauce in the dish to add a deep spicy taste to the dish. We would also utilize Sriracha or red pepper flakes instead if required.

INSTRUCTIONS:

  1. First, heat the oven to 190 °C & place parchment on tray.
  2. Now cut the caps of the bell pepper and remove the membranes and seeds from them.
  3. Put the pepper in the dish and sprinkle the black pepper & salt on it.
  4. Bake them for fifteen to twenty minutes till they get soft.
  5. While they are baking, include the sesame oil in big pan & warm it on medium flame.
  6. Add the frozen fried rice and edamame and cook them for five to seven minutes as it is directly on the pack.  
  7. Add the scallion slices, soy sauce, water, garlic powder, and Chile garlic sauce and cook for another 2 to 3 minutes till the liquid is mostly evaporated.
  8. Take out the pepper and add the hot rice & edamame mix in each pepper.
  9. Put the stuffed pepper in the oven and bake for an extra 10 to 15 minutes till the pepper gets crisp and soft.
  10. When they get baked, sprinkle the scallion slices and sesame seeds over the dish & serve.

SERVING SUGGESTIONS:

  • You can serve these fried rice stuffed bell peppers with green salad + ginger dressing and steamed broccoli.
  • Include a spoonful of Greek yogurt or spicy mayonnaise to make it creamier.
  • Pair these stuffed peppers with miso soup to make it a complete Asian style meal.

TIPS:

  • You can cover the dish with foil for the first twenty minutes to make the peppers very soft.
  • Add the tofu and tempeh cubes with edamame to offer more protein in the dish.
  • We would prepare the filling in advance and reheat it, then stuff them.
  • Add coconut aminos, or tamari if you have an allergy.
