  • 1 tbsp. water
  • 1 tsp. drained nonpareil capers
  • 1 medium clove garlic

  • 1 cup cooked white quinoa
  • 1 can chickpeas — no-salt-added
  • 1 medium carrot
  • 1 cup red cabbage
  • ½ cup scallions
  • ½ medium avocado
  • ⅛ tsp. salt

INGREDIENT NOTES:

GREEK YOGURT:

  • We have to add the unflavored Greek yogurt which is not sweet as well. It will also provide the protein and calcium in the bowl. You would also utilized the whole milk yogurt to add the indulgent texture.

PARSLEY:

  • Fresh flat-leaf parsley adds a bright herbal flavor and fresh green color to the dressing.

TARRAGON:

  • Tarragon provides a distinctive slightly sweet, aromatic flavor that gives the green goddess dressing its classic herbal character.

CHIVES:

  • Chives will include a light onion taste without overpowering other herbs taste & aroma.

MAYONNAISE:

  • We add the mayonnaise to make the rich dressing and it also makes it creamy and smooth. Use a lighter mayonnaise if preferred.

LEMON JUICE:

  3. Add the quinoa in two vessels equally, then include the carrot ribbons, red cabbage, avocado slices, chickpeas, and scallions.
  4. Now sprinkle salt on the chickpeas and vegetables, & add the dressing equally to the bowls.
  5. Then mix the items softly and serve.
