It is prepared with chicken, salsa verde, bell pepper, white onions, poblano pepper, cannellini beans, seasonings, lime juice, radish slices, and herbs. These ingredients are very easily obtainable from the grocery stores. This soup has no dairy items, so dairy allergic people will easily have this soup. This soup is prepared in 50 minutes, so we would easily prepare it for the meal prep. Serve this soup with cabbage slaw, brown rice, and corn tortillas. This soup stores perfectly, so it is good for meal prep as well.

INGREDIENTS:

  • Four cups chicken broth — low-sodium
  • 1½ pounds chicken thighs
  • 2 red & orange bell peppers
  • 2 poblano peppers
  • One cup salsa verde
  • 1 white onion
  • ¾ tsp. salt
  • ½ tsp. ground cumin
  • ½ tsp. dried oregano
  • ½ tsp. garlic powder
  • 2 (15-ounce) cans cannellini beans — no-salt-added
  • 2 tbsp. lime juice + lime wedges (for serving)
  • Fresh cilantro
  • Radishes slices

INGREDIENT NOTES:

CHICKEN THIGHS:

  • Add the chicken thighs to prepare the tasty soup. You will cut the additional fat layer to make the soup light.

CHICKEN BROTH:

  • Include the chicken broth to prepare the soup foundation. It contains low sodium content, so we can easily add the salt as we like.

SALSA VERDE:

  • Include the salsa verde to add a light, spicy & tangy taste, and it will also add the green color. We have to choose the mild or medium salsa as we like.

BELL PEPPERS:

  • Add the orange or red bell pepper to include color in the soup. They will also add a natural sweet taste to it. We have to make equal-sized pieces so they cook equally.

POBLANO PEPPERS:

  • Include the chopped pepper to add a light smoky taste. We have to eliminate the seeds and membranes to add less spice.

CANNELLINI BEANS:

  • Add the cannellini beans to the soup to add creaminess. It will also include protein & fiber, which keeps us full for a long time.

LIME JUICE:

  • Include the lime juice to brighten the indulgent broth, and it also balances the savory taste. It should be fresh to offer a strong flavor.

INSTRUCTIONS:

  1. Put the Dutch oven on a moderate flame, then add the chicken thighs, salsa Verde, bell pepper, chicken broth, onions, seasonings, poblano pepper, & herbs.
  2. Allow the mixture to come to a boil, then decrease the flame to medium-low, cover the pot, and simmer for twenty-five to thirty minutes.
  3. Add the chicken thighs to a plate and allow them to cool lightly, then shred the chicken and put it in the pot.
  4. Add the washed beans to the soup, mash the leftover beans, and then mix them into the soup.
  5. Leave the soup to cook for five more minutes so it gets thick, then add the lime juice.
  6. Add the soup to the vessel, sprinkle with the cilantro and radish slices, and serve.
