INGREDIENTS:

  • 1 pound multicolored baby potatoes
  • 1 cup water, divided
  • 4 center-cut pork chops
  • ½ tsp. ground pepper
  • ¼ tsp. salt
  • 2 tbsp. olive oil
  • 4 tbsp. unsalted butter
  • 4 shallots
  • 3 cloves garlic
  • â…“ cup Dijon mustard
  • 2 tbsp. honey
  • 1 tbsp. tarragon leaves

INGREDIENT NOTES:

BABY POTATOES:

  • We have to utilize the small multicolored baby potatoes to make the tender & hearty base for the meal. It is best to scrub them well before cooking and cut the larger potatoes in half for even cooking.

PORK CHOPS:

  • Use the boneless center-cut pork chops to provide the juicy & protein-rich foundation of the meal. It is best to utilize the pork chops that are about ¾-inch thick, so they cook quickly while remaining juicy.

DIJON MUSTARD:

  • Include the country-style Dijon mustard to create the tangy & flavorful foundation of the sauce. It will also provide a slightly coarse consistency to the sauce.

HONEY:

  • Add the honey to balance the sharp taste of the mustard with a light natural sweetness. It will also help create the signature sweet & tangy honey-mustard flavor.

SHALLOTS & GARLIC:

INSTRUCTIONS:

  1. Add the baby potatoes with ½ cup water in a medium pan and cover it.
  2. Now cook them for ten to twelve minutes on medium to high flame, then strain them and set aside.
  3. Properly dry the chops with paper towel & sprinkle the black pepper & salt on both sides.
  4. Now put the oil in large skillet & heat it on a medium-high flame.
  5. Include the pork chops and cook for three to four minutes till they get brown and are cooked properly; then put them on a plate and cover them loosely.
  6. Now decrease the flame to moderate and include the 2 tbsp. butter in similar pan.
  7. Include the shallots and cook for 3 minutes then mix so they get soft.
  8. Put the garlic and cook for thirty seconds till aromatic.
  9. Include the water, honey, & Dijon mustard and stir properly by scraping the sides.
  10. Include the remaining 2 tbsp. butter and mix till it melts and the sauce gets smooth & creamy.
  11. Add the chops back in the pan and add the sauce over them with a spoon and cook for two to three minutes till they absorb the sauce.
  12. Include the cooked baby potatoes in the pan and mix them properly with the sauce.
  13. Put the pan on the shelf, then sprinkle the fresh tarragon on the pork & potatoes & serve warm.
