INGREDIENTS:
- 2 tsp. olive oil
- 3 medium yellow onions
- 3½ cups water
- 2 tsp. packed dark brown sugar
- ½ tsp. salt
- 2 tbsp. tomato paste
- Two large cloves garlic
- 2 tsp. fresh thyme
- 1 can crushed tomatoes — no-salt-added
- 1 tsp. Dijon mustard
- ¾ tsp. ground pepper
- ½ cup heavy cream
- Four slices boule-style bread
- 1 cup sharp Cheddar cheese shreds
INGREDIENT NOTES:
YELLOW ONIONS:
- This is the main item of this soup, and it should be properly sliced, then caramelized to make the sweet & rich foundation of this soup.
DARK BROWN SUGAR:
- Add the brown sugar to help the onions caramelize and add a mild sweetness to the soup. We have to use the packed brown sugar to include the correct amount.
TOMATO PASTE:
- Add the tomato paste to include a deeper tomato taste and richer color in the soup. It will also help to enhance the overall flavor when cooked with garlic.
CRUSHED TOMATOES:
- Include the crushed tomatoes to create the main tomato base of the soup. We have to use no-salt-added crushed tomatoes to include a smooth texture and bright tomato taste.
HEAVY CREAM:
- Add the heavy cream to include the rich & creamy texture in the soup. It will also make the tomato base smooth and indulgent.
BOULE BREAD:
- Include the boule-style bread to create the sturdy base for the cheesy topping. We have to toast the slices properly so they stay crisp when served with the soup.
SHARP CHEDDAR CHEESE:
- Add the shredded sharp Cheddar cheese to include the creamy, savory, and cheesy flavor in the topping. We have to shred the cheese so it melts evenly over the bread.
INSTRUCTIONS:
- Add the olive oil to the big pot and warm it over medium heat.
- Then add the onion slices and cook for eight to ten minutes till they start to get soft.
- Include salt, ½ cup water, & brown sugar, and cook for ten to fifteen minutes by mixing it continuously till the onions get deeply golden and caramelized.
- Add the garlic, thyme, and tomato paste and cook for one minute till it becomes aromatic.
- Include the crushed tomatoes, Dijon mustard, thyme, 3 cups water, & black pepper & mix to combine.
- Now simmer the soup gently, decrease the flame, and cook for around 15 minutes.
- Add the heavy cream and simmer for two to three minutes.
- Now warm the broiler and put the bread slices on the tray and roast them till they get lightly crisp.
- Add the soup in 4 vessels equally and put the toasted bread slices over the bowls and add the cheddar cheese shreds on top.
- Put the bowls in the broiler for one to two minutes till the cheese melts & golden lightly.
