  6. Whisk in spinach and cook till it wilts, and mix in parsley, feta, and lemon juice.
  7. Make half slices of the roasted sweet potatoes and gently remove a portion of the flesh.
  8. Stir the scooped sweet potato with the spinach filling and mushrooms.
  9. Pour the sweet potato shells and bake for an extra eight minutes.
  10. Whisk the water, avocado, pepper, olive oil, lemon juice, salt, garlic, and herbs till creamy.
