INGREDIENT NOTES:

OLD-FASHIONED ROLLED OATS:

  • Add the old-fashioned rolled oats as they get soft perfectly overnight while maintaining a pleasant chewy texture. We don’t have to add the instant oats as they get overly mushy.

REDUCED-FAT MILK:

  • Reduced-fat milk makes it creamy and provides extra protein without making the oats heavy. You can also substitute with skim milk or soy milk to offer the same protein.

GREEK YOGURT:

  • Plain Greek yogurt will prepare the oats tangy & creamy & offers protein. We have to choose the strained yogurt to offer the thick consistency.

BLACK BEANS:

  • Seasoned canned black beans contribute vegan protein, fiber, & a savory taste. Strain the beans and rinse them properly to eliminate extra sodium.

CHEDDAR CHEESE:

  • Sharp Cheddar offers rich flavor with a small quantity. It is best to use fresh cheese shreds that melt lightly in the oats to make them creamier.

SCALLION:

  • Fresh scallions add a light onion flavor without overpowering the dish. Utilize both green & white parts.

CILANTRO:

  • Fresh cilantro offers a bright taste & fresh which will balance the rich taste of cheese & yogurt.
