INGREDIENTS:

  • â…“ cup canned chickpeas
  • One tbsp. water
  • Ground pepper pinch
  • ½ cup cucumber slices
  • One tsp. parsley
  • ½ cup cherry tomatoes
  • ¼ avocado
  • 3 tbsp. hummus
  • 1 tbsp. roasted red pepper
  • One tbsp. lemon juice

INGREDIENT NOTES:

QUINOA:

  • Include the cooked quinoa to form the hearty and filling foundation of the grain bowl. We would use leftover quinoa as well, and it can also be prepared ahead to save time.

CHICKPEAS:

  • Include the canned chickpeas to raise the fiber & protein in the grain bowl. We would rinse and drain the chickpeas as well, so they don’t add excess liquid to the bowl.

CUCUMBER:

  • Add the cucumber slices to include the fresh, crisp texture in the grain bowl. We would also use mini or English cucumbers to make it more crunchier.

CHERRY TOMATOES:

  • Include the cherry tomatoes to add the juicy texture and natural sweet taste to the grain bowl. We would also halve them so they mix easily with the other ingredients.

AVOCADO:

  • Add the diced avocado to include the creamy texture and mild taste in the grain bowl. We have to dice it just before serving so it stays fresh.

HUMMUS:

  • Use the hummus to make the grain bowl creamy and add protein and a savory chickpea taste. We would also mix it with lemon juice and water to make a simple dressing.

ROASTED RED PEPPER:

  • Add the finely chopped roasted red pepper to include a sweet, smoky taste and extra color in the grain bowl.

LEMON JUICE:

  • Include the lemon juice to add a bright, fresh taste to the grain bowl. It will also aid in balancing the creamy hummus and avocado.

PARSLEY:

  • Add the fresh parsley to include a light, herby taste and fresh finish in the grain bowl. It is optional, but we would include it for more flavor.

INSTRUCTIONS:

  1. Include the hummus, water, and lemon juice in the small vessel and mix to make it smooth.
  2. Add the cooked quinoa to the serving vessel and then include the fresh veggies and roasted red pepper on it.
