INGREDIENTS:

  • 1 large sweet potato
  • ¼ tsp. smoked paprika
  • ¾ cup kale
  • 1 cup canned black beans
  • ¼ tsp. garlic powder
  • ¼ cup hummus
  • 2 tbsp. water
  • Salt and black pepper

INGREDIENT NOTES:

SWEET POTATO:

  • We have to choose a large and firm sweet potato to make the smooth skin and to provide the soft texture & sweet taste.

KALE:

  • Use fresh kale leaves to provide the fresh texture & indulgent taste. We have to remove the tough stems & chop the leaves finely so they get soft quickly.

BLACK BEANS:

  • Add canned black beans to provide the vegan protein & fiber and also make the recipe easier.

HUMMUS:

  • Use smooth and creamy hummus to make the opulent & tangy dressing and also provide a soft texture in the stuffed sweet potato.

WATER:

  • Add the water to loosen the hummus and make a smooth & drizzle able dressing. We have to add it gradually to make the dressing of preferred consistency.

INSTRUCTIONS:

  1. Heat the oven to 400°F & add the parchment on tray.
  2. Now we scrub the sweet potatoes, dry them, and pierce with fork.
  3. Put the sweet potatoes on the tray and bake for 40 to 45 minutes or till they get tender.
  4. Put the kale in a pan and cook it on moderate flame with 1 to 2 spoons of water for 3 to 4 minutes.
  5. Now include the black beans in the kale and heat for more two to three minutes.
  6. Sprinkle the black pepper, salt, smoked paprika, and garlic powder in the dish and mix.
  7. Take the other vessel and add the hummus with 2 spoons of water and whisk properly.
  8. Take out the sweet potatoes and allow them to get cooked.
  9. Now make the slices in length and open the middle part with a fork.
  10. Add the mixture to the sweet potatoes, drizzle the hummus dressing on it, and serve warm.
