INGREDIENT DIRECTIVES:
KETO SWEETENER:
Our experience suggests that monkfruit & allulose give the best results. You may try another type of keto sweetener as well.
EGGS:
Whenever we use the eggs, they must be at the surrounding temperature. It is the universal rule for having the best results.
SALT:
Only a minute amount of salt spikes the deliciousness of our dish.
CREAM (HEAVY):
Always let the heavy cream come at the surrounding temperature for use in baking. You can also name it as double cream/thickened cream
COFFEE FLAVOR:
Instant espresso & a cup of brewed coffee add a strong coffee flavor. It also helps to cut the unpleasant odor of eggs. That is why we don’t need the essence of vanilla in this recipe.

TIPS:
When you have to taste the batter with raw eggs in it, there are chances that you may get sick. We recommend you add the eggs at last after adjusting everything else.
If you want your custard to be lump-free then don’t mix it with a hand whisk/beater. Use a blender, or mixer (hand/stand) to have the smooth baked custard.
If you don’t like the thick custard, then add the mixture in a small saucepan.
Cook it till it thickens & coats on the back of the spoon. After that transfer it into the serving dish & refrigerate.
STORAGE INFORMATION:
FRIDGE:
Place the ramekins in a locked vessel. Use the fridge to keep them away from spoilage. You can consume it within 14/15 days.
Keep it out of the fridge for 0.5 hours. Then serve.
FREEZER:
Pick the container that must be suitable for the freezer. Lock each ramekin alone in a container & freeze it for around 0.5 years.
FAQs:
Is the custard suitable for the ones who are on the keto diet?
Regular custard has too many carbs in it which is why it is not suitable for people on the keto diet. That is why we have provided you with the recipe for the keto version. So, you can have this low-carb, dairy-free, & nutritious egg custard (coffee roll).
The recipe is dairy-free. Can we use dairy?
Yes, if you have no problem digesting the dairy, then feel free to swap coconut milk & cream with dairy milk & cream.
What should we do if we want to have the thin custard that has a texture like panna cotta?
You have to cook the blended mixture in the skillet rather than oven. This technique will assist you in achieving the required consistency.
