INGREDIENT NOTES:

ERYTHRITOL:

  • We advise you to make use of the powdered version of the erythritol in both cookies & filling to have a non-grainy texture. You may also go for monk fruit, swerve, or allulose, but all in powdered form.

ALMOND FLOUR:

  • Make sure to use the flour of almonds without skin & finely powdered. You may go nut-free by substituting an equivalent quantity of seed flour(sunflower) for the flour of almonds.

HEAVY CREAM:

  • It is not a compulsory ingredient, but using it will give your filling a softer & richer feel. Swap it with cream of coconut or Unsweetened almond milk if you want to go non-dairy.

COCOA POWDER:

  • If you want the authentic Oreo taste, go for dark chocolate that must be sugar-free. Regular cocoa powder will also work well.

COOKIES:

  1. Before you begin, preheat the empty oven to 175 degrees Celsius.
  2. Use the paper(parchment) to line a sheet of baking & keep it away.
  3. Include the powdered cocoa/dark chocolate, almond flour, salt, baking soda, & erythritol in a mixing bowl.
  4. Whisk all the above dry items properly.
  5. Then, include egg, butter, & vanilla essence in a separate bowl.
