This dish came up after inspiration from the Spanish recipe for the Romesco Sauce. You can make everything exciting and finger-licking by serving it with this sauce whether it is the roasted chicken, beef, mutton, veggies, or sandwiches.

EQUIPMENT:

  • A Grill
  • Food Processor or Blender 1
  • Platter for Serving 1

INGREDIENTS:

  • 4 Cod Fillets (227 grams)
  • Smashed garlic clove 1
  • One Tbsp. paste of Tomato
  • 1 Tablespoon+ some more fresh parsley, Chopped
  • To taste Black pepper, ground at the spot
  • 1/2 cup of unsalted hazelnuts, roasted.
  • Kosher salt, To Taste.
  • 1.25 cups (227 grams) of Red peppers, Drained and Roasted.
  • Two teaspoons of smoked paprika, divided
  • A Quarter tsp of Red pepper flakes
  • 1/2 cup + 1 tablespoon of Olive oil, Extra-Virgin
  • One Tablespoon of sherry vinegar.
  • Vegetable oil, for greasing the grill.

INSTRUCTIONS:

MAKING ROMESCO SAUCE:

  1. First, pulse Garlic and Hazelnuts in the blender to chop them a little.
  2. Then add tomato paste, parsley, roasted peppers, red pepper flakes, 1.5 tsp of paprika, vinegar, and half a cup of olive oil.
  3. Blend till the mixture gets the appearance and texture of the sauce.
  4. Add more powdered peppercorn, salt, & flakes of red pepper, if required as per your taste.
  5. Combine it well & then shift it to a bowl.
  6. Your Romesco Sauce is Ready!

SEASONING CHICKEN FOR GRILLING:

  1. Make Paprika Oil by combining the remaining half tsp of Paprika powder and 1 tablespoon of Olive Oil.
  2. Apply this Paprika Oil on the whole surface of the Cod with the help of a brush coating on both sides.
  3. Over the entire surface of the cod, liberally season with powdered peppercorn & salt.

GRILLING:

  1. Prepare the grill by heating it for 5 minutes. Now grease the grill with the vegetable oil we have.
  2. Now place the seasoned Cod on the grill and cover it for about six minutes.
  3. Then turn the Cod upside down to cook from the other side for approximately the same time.

SERVING:

  1. When it is tender inside and golden brown on the outside then dish it out in the platter.
  2. Now Drizzle the Romesco Sauce over the grilled Cod and also serve some of the sauce on the side. Sprinkle some parsley and Serve!

TIPS:

Your code shouldn’t stick on the grill. For this heat the grill in a proper way. Apply the oil through the kitchen cloth dipped in the vegetable oil.
You have the option to grill whatever type of fish you choose, such as halibut or salmon. We recommend that Cod gets tender on the grill without any difficulty. So it is better to use Cod when you are going for grilling.

STORAGE DIRECTIONS:

You can store the romesco sauce and grilled Cod in separate vessels.
IN FREEZER:
Keep the grilled Cod in a zip-lock bag and Romesco Sauce in a sealed glass jar frozen for about sixty days.

IN REFRIGERATOR:
You can keep the sauce stored in a glass jar for five or seven days. Use the fridge to store cooked cod in the zip-locked bag only for three or four days.
We mention the particular time of freezing and refrigerating. The refrigerator can slow the bacterial growth but it doesn’t stop. So, must consume the food within the specified time.
