Ingredients:

  • Vanilla extract: 1/2 tsp.
  • Baking soda: 1/4 cup.
  • Swerve brown: 1/3 cup.
  • Pecan halves: 1/2 cup.
  • Almond flour: 1/2 cup.
  • Butter: 6 tbsp.
  • Swerve granular: 1/4 cup.
  • Dark chocolate: 4 oz.

Instructions:

  1. Spread out the pecans in a single layer and preheat the oven to 350 degrees.
  2. Bake for about 8 minutes, till it’s lightly toasted.
  3. Take out, allow to cool fully, then transfer to a food processor and pulse til finely ground (be careful not to turn them into butter).
  4. Put aside.
  5. Lower the oven temperature to 325 °F and place silicone mats on two baking sheets (you can use parchment paper, but it will burn them more quickly).
  6. Beat the butter and sweeteners together in a big basin and stir until well combined.
  7. After adding the egg and vanilla extract, whisk in the salt, baking soda, almond flour, and crushed pecans.
  8. Scoop the dough onto the prepared baking sheets using a 1-tablespoon cookie scoop, being sure to leave at least two inches of space between each cookie.
  9. Roughly thirty cookies should be yours.
  10. After baking for five minutes, take them out of the skillet and smooth them out using a glass that has a flat bottom.
  11. Press down on the cookies, then cover with parchment if the dough is clinging to the glass.
  12.  Scoop it out and let it cool fully on the pan.
  13. While they are baking, some oil could leak out, but it will return after they cool.

Notes:

Spoon approximately two teaspoons of the chocolate mixture onto the bottom of a cookie, then place another biscuit on top. Put in the pantry to solidify.
