EQUIPMENT:

  • Electric mixer or hand whisk
  • Food processor or blender
  • Parchment paper
  • Spatula

INGREDIENTS:

For the crust:

  • 1 ½ cups almond flour
  • ¼ cup granulated Erythritol
  • ¼ cup melted butter
  • Pinch of salt

The cheesecake layer:

  • 16 oz. cream cheese
  • ½ cup powdered Erythritol
  • 2 large eggs
  • 1 tsp. vanilla extract
  • ¼ cup sour cream

For the raspberry swirl:

  • ½ cup fresh or frozen raspberries
  • 1–2 tbsp. powdered Erythritol
  • 1 tsp. lemon juice

INGREDIENT NOTES:

SOUR CREAM:

  • It will give you a light and smooth finish. If you don’t have cream(sour), you can also work with yogurt(Greek).

BUTTER:

  • It is required to set the crust. Be careful about butter. If you are using the unsalted version, then you have to add a pinch or two of salt separately; otherwise, never add salt if you have the salted version of the butter.

JUICE OF LEMON:

  • Adding lemon juice to the swirl of raspberry will enhance its taste & flavor a lot.

KETO FLOUR:

  • Here, we are using the flour of skinless almonds. This will give our crust a smooth finish. Avoid using the almonds with the skin.

ESSENCE:

  • Balance the overall aroma & flavor of the raspberries. Always use the purest form of this essence.

KETO SWEETENER:

  • You may use any of the following keto sweeteners: allulose, monk fruit, erythritol, etc. Their granular version will go best in the crust, while filling requires the powdered version for a smooth finish.

RASPBERRIES:

  • We always suggest that you use the fresh version of raspberries. If fresh raspberries are not in season, then go for the frozen ones. You need to defrost them first & remove their excess water before making their swirl.

CREAM CHEESE:

  • This will get you the rich, creamy texture if you go for the high-fat brick of cream cheese. Remember to soften it before using so that it will combine in proper way.

FAQs:

What other options will work for the crust in place of almond flour?

  • You may use the coconut flour or the combo of almond & coconut flour as well. Anyone with a nut allergy can go for sunflower seed flour.

May we use frozen raspberries if fresh ones are out of season?

  • Fresh raspberries always work best. If the raspberries(fresh) are not in season, then you may go for the frozen raspberries. But there will be excess water when you defrost them to use. First, strain that water completely, then use.

What may be the reason for cracking the layer of cheesecake?

  • Overbeating/baking, or sudden changes of temperature, are the reasons your cheesecake layer gets cracks.

Is there any solution to avoid cracks in my cheesecake filling?

  • Do not overbeat the cream cheese filling. Bake it at a low temperature. After that, cool it down with the gradual change in temperature.
