  • 2 glass jars for incubation or storage.
  • A saucepan.

INGREDIENTS:

LIST FOR ALMOND FLOUR YOGURT:

  • Active culture capsules of probiotics, 2
  • Two cups of water.
  • 1/4 teaspoon of lecithin from liquid sunflower
  • Almonds, 1/4th cup.
  • Half a tablespoon of gelatin powder.
  • 2 cups of heavy cream.

LIST FOR NORMAL WHOLE MILK:

  • Active culture yogurt, 1/4 cup.
  • 946 ml of whole milk.
  • Heavy whipping cream, 946 ml.

INSTRUCTIONS:

FOR ALMOND FLOUR YOGURT:

 

PREPARATION:

  1. Take two jars with a capacity of 500 ml.
  2. Wash both jars with soap and hot water to clean them with any unwanted bacteria.
  3. Then keep them for drying.

MAKING OF ALMOND MILK AT HOME:

  1. Take almonds in the spice blender and blend them until powdered.
  2. Now add the powder of almonds and water to the blender.
  3. Run at high speed till they both combine well to give the creamy milk texture.
  4. Now pass this mixture through a cheesecloth to remove any almond particles.
  5. You have got the almond milk ready.

WARMING THE MILK AND CREAM MIXTURE:

  1. Take the homemade almond milk and heavy cream in a saucepan.
  2. Heat it over the normal flame while mixing it.
  3. When you observe the bubbles in the corners of the milk then your milk is heating up.
  4. Dust the powder of gelatin and mix well.
  5. Turn the heat off, and thoroughly mix in the powdery lecithin.

ASSEMBLING TO START THE YOGURT-MAKING PROCESS:

  1. Transfer the cream & almond milk mixture into the dry, sterilized jars.
  2. Wait till the temperature of the mixture is between 100 & 110 degrees C.
  3. Open the probiotic capsule over each jar and insert its powder.
  4. Then mix it well and cover each jar with its lid.

INCUBATION:

  1. There are two ways that you use to incubate the jars for the fermentation process to carry out:
  2. Place the jars on the baking sheet and keep them in the oven.
  3. Don’t heat the oven. Turn on its lights and close its door.
  4. Keep the jars of yogurt there for about 12 or 24 hours.
  5. The other method you can use is to keep the jars wrapped in a warm blanket.
  6. That keeps them warm till fermentation completes.

CHILLING:

  1. As soon as you see the yogurt-making process is complete, you immediately have to put it into the refrigerator to make it chill.
  2. If it becomes extra thick after chilling then mix it well.
  3. You have the homemade, keto, and creamy yogurt.

FOR WHOLE MILK YOGURT:

  1. Take 946 ml of whole milk that is ultrafilter and ultra-pasteurize in the saucepan.
  2. Add heavy cream in equal amounts or take 946 ml of extra whole milk in place of cream to lower the fat content as well.
  3. Heat them while stirring at regular intervals. Wait till their temperature reaches 180 degrees C.
  4. At this point turn the heat off and wait till the temperature of the heated milk-cream mixture comes down to 112 C.
  5. At this temperature, add yogurt and mix well.
  6. Close the lid and wrap the saucepan with an insulation cover or warm blanket to keep it warm till the yogurt forms.
  7. As soon as the yogurt formation process finishes then you have to transfer the yogurt to glass jars or containers and place them in the fridge to chill.
  8. Use chill and creamy, thickened, keto yogurt the way you want to use it.

SERVING THE YOGURT:

There are many flavoring options. Utilize any or all these methods to add diversity:

FRUIT FLAVORING:

Take any of your favorite keto fruits and cook them with an easy-to-dissolve keto sweeteners. When the fruit gets tender, then blend it to make the puree. Strain the puree if needed. Combine the keto fruit puree to give the yogurt that fruit flavor.

RASPBERRY-ALMOND:

Mix vanilla essence in the almond milk yogurt and top with raspberries and chopped almonds. Enjoy!

CHOCOLATE-STRAWBERRY:

Add cocoa powder, vanilla essence, and a keto sweetener to either plain or almond yogurt. Mix well. Garnish with dark chocolate and strawberries.

PEACH:

  5. You have given the mixture proper incubation time and temperature. It still looks like the liquid then look for the expiry date of probiotics.
  6. As they die over time. If you use old and dead probiotics, then the process of fermentation will not occur.
