INGREDIENTS:
- A cup of blueberries
- Almond flour 1.25 cups
- 1.5 cups of shredded zucchini
- Flour of coconut, 0.25 cup
- 0.5 cup of Greek yogurt/sour cream
- A teaspoon of baking powder
- Liquid extract of keto sweetener (monk fruit), 1 tsp
- 0.25 teaspoon of baking soda
- One-half tsp of liquid stevia(keto sweetener)
- Powder of cinnamon, 1.5 teaspoon
- Two tsp of vanilla essence
- 1/2 teaspoon of salt
- Eggs, 2
- One-fourth tsp of lemon zest (dried)
INGREDIENT NOTES:
BLUEBERRIES:
- Use blueberries (fresh/frozen) whichever you have. The frozen ones will work as same as the fresh blueberries.
FLOUR:
- We recommend you combine the coconut flour with flour(almond) for a nice texture. They both are low-carb, & gluten-free.
ZUCCHINI:
- If you are planning to use zucchini then you must get a grater. The grated zucchini will mix & get distributed evenly into the batter.
LEMON ZEST:
- Try using the dried lemon zest here. We recommend that the fresh one will not do the best work in this recipe.
GREEK YOGURT:
- Use Yogurt(Greek) or cream(sour) in your muffins. So, they will be too moist along with the addition of fats (healthy)
EGGS:
- The addition of eggs helps to increase the protein content. It also helps in raising the muffins & acts as the binding
INSTRUCTIONS:
- Plug the oven inside the socket & heat it empty at 350 F.
- Pick a muffin tray with 12 muffin cups.
- Apply oil to the bottom & sides of all these muffin cups.
- Now, place a little vessel & gather all the other items on your kitchen shelf.
- Include, all the solid items in that little vessel & mix well.
- Place that vessel in a corner & pick another big vessel.
- Then, include all the wet/liquid items in that vessel to combine them well.
- Now shift the mix of solid items in three or four parts to the vessel of liquid items.
- Mix them well to have a smooth batter.
- Then, include blueberries, and zucchini into it.
- Fold them well to evenly distribute them throughout the batter.
- Now fill 3/4th of each oiled muffin cup with the batter.
- Shift the muffin tray from the kitchen shelf to the oven.
- You will see the the muffins rise and have a golden brown surface.
- At that time check by injecting a toothpick.
- If the toothpick comes out without any traces of muffin batter so, your muffins are ready.
- Shift the muffin tray on the kitchen shelf from the oven.
- Dish out the muffins from their tray after fifteen mins.
- Place them on the rack (cooling) so, that they come down to the surrounding temperature.

TIPS:
- We recommend you to let the muffins a little firm then, you take them out from the tin. As the muffins are too delicate to handle right after baking.
- The zucchini that we have used in the muffins may cause them to stick to the tin despite oiling. For this reason, you would be better off using muffin liners(silicone/paper)
