I’m a self-professed under-the-rock dweller, so I didn’t find them until a few weeks ago.
If you haven’t heard of cowboy cookies, my hunch is that you’ve already eaten some without even realizing it. For me, that was the situation!
How do Cowboy Cookies work?
Made with chocolate chip cookies, oats, pecans, and shredded coconut.
Some people substitute walnuts for pecans.
They are a wonderful treat to eat and share since they are so rich in flavor and texture.
We’re simply making a low-carb/ketogenic version of Laura Bush’s Cowboy Cookies, which have gained a lot of popularity.
Keto Cowboy Cookies’ ingredients are as follows:
Almond flour will be used in place of ordinary flour in this treat because it is low in carbohydrates, and sugar-free brown sugar will be used in its place (for that richer flavor).
Oats are used in classic cowboy cookies, as I said previously, but they have a fair quantity of carbohydrates. What will we do then?
Oat fibre is exactly what it sounds like, and I recently learned about it. It just contains oat fibre, which eliminates the carbohydrate and imparts an oaty flavor.
Is the oat fibre in this dish absolutely necessary?
No. You may simply substitute it with an additional 1/2 cup of almond flour if you don’t mind sacrificing the oat flavor.
These ingredients are added to the almond flour, sugar-free brown sugar, and oat fibre.
Really, not much different from the norm!
Recipe Modifications
Coconut sugar can be substituted for the sugar-free brown sugar in the recipe to make it paleo.
You can use ordinary light brown sugar for the low-carb option if you typically use standard brown sugar in baking.
Substitute walnuts for the pecans.
Notes
If you don’t mind sacrificing the oat flavor, you can also swap it out for an additional 1/2 cup of almond flour.
