Mango, lime, and coconut will add tropical flavors and a natural sweet taste to these energy balls. You can’t have these energy balls if you are nut allergy, as they have pistachios. You can easily store these energy balls; they’re good to prepare in advance. These energy balls are prepared in 20 minutes, perfect for a last-minute party snack. Serve these energy balls with Greek yogurt, fresh berries, and green tea.

INGREDIENTS:

  • 1 cup boiling water
  • 1 cup unsweetened dried mango
  • ½ cup raw pistachios
  • ½ cup Medjool dates
  • 3 tsp. lime zest

INGREDIENT NOTES:

DRIED MANGO:

  • Dried mango is the main ingredient of these balls. We have to use unsweetened dried mango to provide the natural sweet & tropical taste, & chewy texture. It also adds vitamin A and helps to offer a soft energy ball texture.

MEDJOOL DATES:

  • Medjool dates make the filling naturally sweet. They help to bind the mixture, offer a flavor like caramel, and provide fiber and minerals.

ROLLED OATS:

  • The old-fashioned rolled oats provide the texture. They add fiber and slow-digesting carbs and also provide structure and a satisfying texture in these energy balls.

RAW PISTACHIOS:

  • Pistachios offer a crunchy texture and rich nutty flavor in these balls. They also provide good fats and vegan protein that make these energy balls healthier.

HEMP SEEDS:

  4. Blend all these components till it gets sticky and chopped.
  5. Then add one spoon of mixture and roll them with hands to make the balls.
  6. Now mix the coconut shreds and lime zest in a shallow bowl.
  7. Add the balls to the vessel and roll them to coat properly.
  8. Put these balls in a tray and chill for 20-30 minutes, then serve
