The traditional recipe of chicken satay utilizes the sugar in the marination and the peanut sauce. - ½ (cup) coconut aminos
- ¼ (cup) full-fat coconut milk
- 1 tablespoon sauce (Fish)

INGREDIENT NOTES:
CHICKEN:
I use chicken thighs (boneless and skinless) because they are juicier. We could also utilize chicken breast (boneless and skinless).
OLIVE OIL:
Olive oil is used to brush on the chicken it keeps the moisture in the chicken and also helps to prevent it from sticking on the grill. Any other neutral oil like avocado or sunflower oil will also work.
COCONUT AMINOS:
- Coconut aminos make the base of a marination mixture used as a substitute for soy sauce. Tamari or low-sodium soy sauce also gives great results.
LIME:
- Lime helps the chicken to get tender. Lime also gives a sharp flavor to the chicken. Lemon juice or its zest works in the same way as lime.
GARLIC:
- Fresh garlic is used in the chicken satay. But jarred garlic paste or garlic powder works the same.
GINGER:
- Use the ginger that is fresh and has a nice smell and flavor. You can also add grounded ginger as well.
CURRY POWDER:
- Yellow curry powder is used in this recipe. You can use red, green, or even Madras curry powder as well.

INSTRUCTION:
- Take a medium bowl.
- Add ½ cup of coconut aminos, ¼ cup coconut milk (full-fat), 1 tbsp., sauce (Fish), 1 tablespoon Lime juice, four minced garlic cloves, 1 teaspoon Ginger (freshly grated), and 2 tsp. Curry powder.
- Whisk all the ingredients well.
- Cut the Chicken thigh into 1-inch thin strips with the knife which makes 4 strips from a thigh.
- Put the chicken in the plastic bag add the marinade seal the bag and toss in it well.
- Put the chicken in the fridge for 24 hours if possible or for at least 2-3 hours for flavorful chicken.
- Meanwhile put the wooden skewer in cold water for thirty to sixty minutes to prevent it from burning on the grill.
- Heat the grill for ten to fifteen minutes on medium to high heat.
- In the meantime put the chicken on the wooden skewers lengthwise and brush the oil on the chicken.
- Put the chicken skewers on the grill and cook it for three to five minutes from each side till it gets crispy.
- If you have chicken thigh cooks it at 170 degrees Fahrenheit and if you have chicken breast cook it at 165 degrees Fahrenheit.
- You can dish out and garnish it with sauce (peanut), chopped (peanuts), fresh cilantro, and wedges of lime.
TIPS:
- You can slice your chicken in the same thickness to ensure it is cooked evenly.
- If likely infuse the chicken for about 24 hours for the best flavors.
- Put the chicken pieces in a way that there is a space in between so they cook evenly.
- You should use a thermometer (meat) to check the temperature.
