INGREDIENTS:

  • 454 grams of small diced chicken
  • Southwest seasoning, 2 tbsp.
  • To taste salt.
  • 1/4th teaspoon of powdered garlic, dried.

  • 1/2cup + 1/2 cup of shredded cheddar cheese

INGREDIENT NOTES:

  • CHICKEN: You are free to use your preferred chicken meat. May it be chicken breasts, rotisserie chicken, or thighs. Here the recipe uses about half a kg of chicken. Add more chicken as you wish.
  • WONTON WRAPPERS: Buy keto wonton wrappers from the market and use them as they make the base of the won-ton cups.
  • SOUTHWEST SEASONING: It is a blend of different spices and herbs. It gives our chicken a unique southwestern touch.
  • OTHER SEASONINGS: We have Salt and pepper as other seasonings on the list. As we know southwest seasoning already contains salt and pepper. That’s why add them only if you need to.
  • BLACK BEANS + CORNS: They not only give taste to the filling of wontons but also add protein content to the dish.
  • CHEESE: The recipe uses cheddar cheese to combine the filling and topping.
  • CILANTRO LEAVES: Use as a garnishing.

INSTRUCTIONS:

WORKING ON WON-TON WRAPS:

  1. Set the oven to 350 Fahrenheit.
  2. Take a muffin tray.
  3. Keep a wonton wrapper in each cup.
  4. Insert the muffin tray in the Oven and make them firm in 5 minutes.
  5. Take the muffin tray out and keep it away.

WORKING FOR ITS FILLING:

  1. In a bowl, mix chicken with Southwest seasoning, and garlic powder.
  2. Heat the oil in a pan or the skillet on a normal heat.
  3. Transfer the seasoned chicken from the bowl to the pan and cook for a short while.
  4. Now add black beans, corn, and half a portion of the cheese.
  5. Cook for a short while along with stirring.
  6. Your filling is ready after melting the cheese.

ASSEMBLING:

  1. Add about a full tablespoon of filling in each of the 36 wonton cups.
  2. Top each of the cups with a little cheddar cheese.
  3. Place the muffin tray back in the oven and wait till the cheese melts and the wonton wrappers become golden.
  4. When you get the baked won-ton cups, garnish them with some fresh and chopped cilantro leaves.
  5. Serve them warm.

VARIATION IDEAS:

  • MEAT VARIETY: If you don’t like to eat chicken you are most welcome to use seafood, or minced and cooked beef.
  • HOT TACO CUPS: If you want to try any other flavour. You are most welcome to try taco seasoning along with chipotle pepper, pepper jack cheese, or jalapenos. It will bring a delightful spice to your cups.
  • VEG VERSION: You must try the vegetarian won-ton cups by skipping the meat. Add grains and more vegetables of your choice.
  • BANG BANG FILLING: Make the bang bang sauce and mix it with the cooked chicken to make the filling and sprinkle roasted sesame seeds.

TIPS:

  1. You can also use taco seasoning or chilli powder + cumin instead of southwest seasoning.
    if you want more crispiness then you have to double the won-ton wrapper.
  2. You can bake the cups earlier and store them at normal temperature till you want to fill them.
  3. You can use any recipe you choose and make the shredded chicken earlier to save time.
  4. Cilantro lime crema or sour cream pairs best with the chicken won-ton cups.
  5. Grease the muffin cups if you feel that wrapper of won-ton will be tear when we take them out after baking.
  6. If you can not find won-ton wrappers then you are free to use tortillas by cutting them into small circles or squares.

STORAGE INFORMATION:

Place the baked cups in any container and seal it well. Consume within 3 or 5 days by keeping them in the fridge.
If you don’t fill the baked wonton wrappers, you can keep them for a couple of days at normal temperature.
