Servings: 6 small cups
Prep Time: 10 minutes
Chill Time: 30 minutes
Total Time: 40 minutes
Ingredients
-
8 oz (225g) cream cheese, softened to room temperature
-
1 cup heavy whipping cream
-
¼ cup unsweetened cocoa powder
-
½ cup powdered erythritol or monk fruit sweetener (adjust to taste)
-
2 oz (about 60g) sugar-free dark chocolate, melted and slightly cooled
-
1 tsp vanilla extract
-
Pinch of salt
Optional Toppings (choose your favorites):
-
Sugar-free chocolate shavings
-
Crushed pecans or walnuts
-
Whipped cream
-
Fresh raspberries or strawberries
Instructions
1. Prep Your Cream Cheese
Make sure your cream cheese is softened. If it’s too firm, the mousse will have lumps. To speed things up, cut the cream cheese into chunks and let it sit at room temperature for 20 minutes.
2. Whip the Cream
In a chilled mixing basin, combine the heavy whipping cream. Beat with an electric mixer until stiff peaks form. Set aside—this will give your mousse a light and airy feel.
3. Make the Chocolate Base
In a separate bowl, combine the softened cream cheese, cocoa powder, powdered sweetener, vanilla extract, and a pinch salt. Beat until smooth and frothy, scraping down the sides of the bowl as necessary.
4. Add Melted Chocolate
Slowly add in the melted dark chocolate while stirring. This enhances the chocolate flavor and makes the mousse more luscious.
5. Fold in the Whipped Cream
Using a spatula, gently fold in the whipped cream to the chocolate cream cheese mixture. Do this in two or three batches to keep the mousse frothy and not lose volume.
6. Chill
Spoon the mousse into small cups or bowls. Refrigerate for at least 30 minutes to allow the flavors to mix and the mousse to firm somewhat.
7. Garnish & Serve
Top with whipped cream, berries, or a sprinkle of sugar-free chocolate shavings for a dessert that looks as good as it tastes.
Storage
-
