  • A peeler
  • Blender 1
  • Six serving bowls

INGREDIENTS:

  • A thinly sliced medium cucumber
  • 300 g of avocadoes, medium
  • Half cup of oil of olives (extra-virgin)
  • 3 cucumbers (large)
  • Sea salt, 3/4 tsp.
  • Minced garlic cloves, 2
  • One-fourth tsp of black pepper
  • 2 roughly chopped spring onions (large)
  • 480 ml of chicken/veggie stock or water
  • A bunch of fresh basil, 28 g.
  • 45 ml of lemon/lime juice

INGREDIENT NOTES:

OLIVE OIL:
The recipe uses oil of olives that is extra-virgin. If you don’t want to use that then feel free to use the light version of oil of olives, coconut/avocado oil.
LEMON JUICE:
The recipe directions allow you to swap the juice of lemon with that of lime. Its sourness gives an enhanced kick of taste.
CUCUMBER:
You may choose English or Persian cucumber. English cucumber has small seeds & thin peel as compared to the Persian ones.
HERBS:
The instructions of the recipe use basil and green onion. Feel free to use
Parsley
Mint
Dill
Chives
Using fresh herbs will be best but if you don’t get any then feel free to use dried herbs. Use the dried herbs one-third of the fresh ones as they have a stronger flavor.
AVOCADOES:
It is used to provide the soup with healthy fats.
GARLIC:
If we have to fry the minced garlic then only a single clove would never be enough. However, in case we use fresh and raw garlic, then a large or two small cloves would be enough.

INSTRUCTIONS:

PREPARATIONS:

  1. Wash the spring onion, cucumber, and avocadoes very well.
  2. Take a peeler and peel garlic, avocadoes, & cucumber (if you wish).
  3. Slice the thin slices of cucumbers with the help of a knife.
  4. Chop the spring onion.
  5. Half the avocadoes & remove their seed.
  6. Mince the garlic.

BLENDING:

  1. As you have completed all the preparations then start blending.
  2. Take a blender, and add cucumber along with water.
  3. Next add pepper, avocadoes, salt, onions, lime juice, garlic, some oil, and basil.
  4. Blend till you get the smooth & creamy mixture.
  5. Transfer to any utensil that fits in the fridge.
  6. Give it a least 100 or 120 minutes to chill.
  7. Meanwhile, cut thin slices of the cucumber.
  8. When planning to serve, transfer the soup into the serving bowl.
  9. Arrange the thin cucumber slices along with some fresh basil and oil.

TIPS:

  1. You may keep the empty serving bowls in the freezer to keep your soup chill till the last spoon.
