YOLKS OF EGG:

  • We require the yolks of three eggs to thicken our pudding like custard. Mix them well in the room temperature items & stir continuously while cooking to avoid their scrambling.

THICKENER(LOW-CARB):

  • We are using the orange-flavored gelatin to thicken our dessert. Be careful to choose the brand that produces the sugar-free version of gelatin powder. If you didn’t find the sugar-free brand, go for half a tsp. of xanthan gum.

ESSENCE OF ORANGE:

  • Here, we choose the essence of orange in place of orange juice to induce a deep & strong citrus flavor. The essence of orange will perform the work of orange juice without adding the carbs.

WHIPPING CREAM:

  • It is low in carbs while high in fat content(perfectly keto). The unwhipped cream(full-fat) without preservatives will give you the perfectly rich & thick pudding.

ALMOND MILK:

  • The milk of almonds is low in carbs & provides the base along with cream. You may replace the milk of almonds with the milk of coconut. Be sure to always choose the unsweetened version of these low-carb milk.

INSTRUCTIONS:

  1. Place a normal-sized saucepan over a normal flame.
  2. Mix the milk of almond & heavy cream to form the base of the pudding.
  3. Stir them till they become just warm, not hot.
  4. Include the sweetener, salt, yolks of egg, & zest of orange in a separate bowl.
  5. Use a whisk to combine them into a smooth & pale yellow mixture.
  6. Now, take the bowl in which you have kept the yolks of the egg.
  7. Include ~quarter cup of warm milk mixture, stir constantly to prevent scrambling.
  8. The eggs(tempered) should be added to the saucepan’s milk-cream mixture(leftover).
  9. Now, cook it over a normal full flame, mixing continually until the mixture thickens.
  10. Then, turn the flame off & keep the saucepan on the counter.
  11. Include the essence of orange & vanilla, & food color.
  12. Mix well, then evenly sprinkle xanthan gum/thickener.
  13. Dissolve it using the whisk & pass the pudding through a fine mesh strainer(fine mesh) into a bowl(clean).
  14. Allow your pudding to cool for ~ten mins.
