- 2 tbsp. olive oil
- 1¼ pounds sweet potatoes
- ¾ tsp. salt
- 1½ cups water
- 1 medium red bell pepper
- 1 big poblano pepper
- 1 tsp. powdered cumin
- ¾ teaspoon smoked paprika
- 3½ cups cooked chicken breast
- 1½ cups red enchilada sauce
- 1 can no-salt-added pinto beans
- 8 corn tortillas
- 1 cup Pepper Jack cheese
- ¼ cup sour cream
- Cilantro, sliced radishes, lime wedges, pickled red onions
INGREDIENT NOTES:
OLIVE OIL:
- Olive oil is utilized to soften the vegetables and offers the good fat content. It will enrich the indulgent flavor without making it oily.
SWEET POTATOES:
- It will offer the natural sweet taste and provides the fiber, and vitamin A. We have to cut them in equal size to cook them uniformly.
RED BELL PEPPER:

- Then add the poblano pepper, olive oil, & bell pepper in it and cook for five minutes till they get soft.
- Sprinkle the seasoning and cook for more thirty seconds.
- Then include the chicken shreds, enchilada sauce, pinto beans, and water and mix properly.
- Now mix the wedges of tortillas and coat them equally in the sauce.
- Sprinkle the pepper jack cheese equally on top and add in the oven skillet.
- Add the pan in oven & bake for ten to twelve minutes till the cheese melts.
- When they get bake, leave for five minutes.
