High-Protein Chicken & Sweet Potato Enchilada Skillet is a hearty Mexican dinner. It contains olive oil, sweet potatoes, red bell pepper, poblano pepper, spices, corn tortillas, and Pepper Jack cheese. This dish contains lots of protein & keeps the meal balanced & satisfying. INGREDIENTS:

  • One tsp. garlic powder
  • 2 tbsp. olive oil
  • 1¼ pounds sweet potatoes
  • ¾ tsp. salt
  • 1½ cups water
  • 1 medium red bell pepper
  • 1 big poblano pepper
  • 1 tsp. powdered cumin
  • ¾ teaspoon smoked paprika
  • 3½ cups cooked chicken breast
  • 1½ cups red enchilada sauce
  • 1 can no-salt-added pinto beans
  • 8 corn tortillas
  • 1 cup Pepper Jack cheese
  • ¼ cup sour cream
  • Cilantro, sliced radishes, lime wedges, pickled red onions

INGREDIENT NOTES:

OLIVE OIL:

  • Olive oil is utilized to soften the vegetables and offers the good fat content. It will enrich the indulgent flavor without making it oily.

SWEET POTATOES:

  • It will offer the natural sweet taste and provides the fiber, and vitamin A. We have to cut them in equal size to cook them uniformly.

RED BELL PEPPER:

  • Bell pepper will add the sweet taste and color. It will offer the vitamin C and also offer the texture of the cooking.

PABLANO PEPPER:

  • It will add the light smoky taste in the dish. You can include the green bell pepper instead to provide the light flavor.

SEASONING:

  • Add the cumin, garlic powder, & smoked paprika to season the dish. It will add the earthy, savory, and smoky flavor in the dish. Alter the quantity of seasonings as you like.

CHICKEN BREAST:

  • Chicken breast is utilized to make protein rich dish without adding the fat content. Use the Rotisserie chicken instead to make it convenient.

RED ENCHILADA SAUCE:

  • Add the enchilada sauce to combine the components to offer the rich tomato taste and light spice.

PEPPER JACK CHEESE:

  • Add the pepper jack cheese in the dish and provides the rich and creamy flavor.

SOUR CREAM:

  • Use the sour cream to make this dish. It will help to balance the smoky and spicy flavors.

INSTRUCTIONS:

  1. Heat the oven at 200° C.
  2. Now, warm one tablespoon of oil on moderate to high flame.
  3. Then include the sweet potatoes, salt, and water in pot and cover it to cook for ten to twelve minutes.
  4. Now open the pot and cook till the extra water will get dry.
  5. Then add the poblano pepper, olive oil, & bell pepper in it and cook for five minutes till they get soft.
  6. Sprinkle the seasoning and cook for more thirty seconds.
  7. Then include the chicken shreds, enchilada sauce, pinto beans, and water and mix properly.
  8. Now mix the wedges of tortillas and coat them equally in the sauce.
  9. Sprinkle the pepper jack cheese equally on top and add in the oven skillet.
  10. Add the pan in oven & bake for ten to twelve minutes till the cheese melts.
  11. When they get bake, leave for five minutes.
  12. Add the sour cream on top and sprinkle the cilantro, lime slices, radish, & pickled onions then serve
