INGREDIENTS:

POTATO BOWLS:

  • 1 & ½ pounds Yukon Gold potatoes
  • 1 tbsp. olive oil — extra-virgin
  • 1 tsp. chili powder
  • 1 tsp. smoked paprika

  • ½ tsp. garlic powder
  • ¼ tsp. salt
  • ¼ tsp. ground black pepper

TACO BEEF:

  • 1 tsp. smoked paprika
  • 1 pound lean ground beef
  • 1 tsp. ground cumin
  • 1 small yellow onion
  • 2 cloves garlic
  • ¼ tsp. salt
  • 1 tbsp. chili powder
  • ½ cup water
  • ¼ tsp. ground black pepper
  • ½ cup salsa
  • ½ tsp. dried oregano

ASSEMBLY:

  • 1 cup shredded cheddar cheese — reduced-fat
  • ½ cup plain Greek yogurt
  • 1 medium tomato
  • ½ cup corn kernels
  • ½ avocado, diced
  • ¼ cup fresh cilantro
  • 2 green onions
  • Lime wedges

INGREDIENT NOTES:

POTATOES:

  • We have to utilize the Yukon Gold Potatoes to make this dish. They will get nicely crisp and creamy. We have to cut the potatoes into small, same-sized pieces so they get cooked in equal time.

LEAN GROUND BEEF:

  • We have to use the 90 to 93% lean ground beef to make these bowls, to have the high protein content without much fat. It is best to use ground turkey or chicken instead if required.

  7. Add the salsa and water to the beef & simmer for three to five minutes till the mixture gets flavorful.
  8. Now add the roasted potatoes in between four serving vessels, then top them with taco beef, then sprinkle the cheddar cheese on top.
  9. Put the assembled bowls in the broiler for 1-2 minutes so the cheese melts.
  10. Then top these bowls with preferred toppings and serve with lime wedges.
