Keto Bison Meatballs. Similar to beef, Bison meat is a healthy red meat but has less calories and fat which means for leading healthy lives, bison meatballs are the perfect alternative to classic meatball recipes. For an absolutely delicious dish that keeps you on your keto diet, this bison meatball recipe uses ground bison and dried/chopped fresh herbs.
Almond flour is used in place of bread crumbs in order to reduce the carb intake and for the ultimate finger food, each meatball is wrapped in bacon. To give the meatballs a hint of sweetness, the onion is first caramelized in some olive oil on the stove. If you want the flavor to be a bit more concentrated, use red onion. Serve it with greek yogurt sauce/marinara sauce. You can use an Italian seasoning blend to switch it up and simmer it in some tomato sauce. When you get home from work, you can cook it in an instant pot/crockpot, warm and waiting for you. As garnish will make this dish divine, some finely chopped cilantro/fresh basil.
You can prepare a lot of it which is the best part and then pack for lunch the next day, or for easy weeknight dinners, freeze portions of it. At a holiday potluck, or skewered and grilled on the barbecue in the summer, these do great as appetizers. This is the recipe for that if you needed keto game night finger foods. You can add an egg as a binder if you find that it falls apart too easily, (but it should not need it at all.)

INGREDIENTS
Ingredients for EIGHT meatballs:
- (Prefer Simple Truth) 1 lb 85% ground bison
- 8 slices bacon
- 1 tablespoon extra virgin olive oil
- 1/2 cup red onion, diced
- 1 egg
- 1 red bell pepper, diced
- 1/4 cup almond flour
- 1/3 cup chopped cilantro
Seasonings:
- 1 tablespoon smoked paprika
- 1 tablespoon thyme
- pinches of sea salt & pepper
STEPS
- Set oven to 400F.
- On medium heat, set a nonstick skillet and add red onion and olive oil. Until they are carmelized, saute the onions.
- To a bowl, add the onions, and add in the rest of the ingredients. Mix and with a fork, mash them up.
- With your hands, form small meatballs, about EIGHT ping pong ball-sized meatballs.
- In ONE strip of bacon, wrap each meatball and on a baking sheet/rack, place it flap-side down.
- For FIFTEEN minutes, bake in the oven at 400F. For the last 2-3 minutes of baking, so the outside gets a little crispy, set the temperature in the oven to broil.
