This thick, chewy Keto Thin Mint Cookies combines the scents of peppermint and chocolate.
Ingredients
- 5 oz. melted dark chocolate (at least 70% cacao)
- 30 ml of coconut oil
- 1 and a half cups almond flour
- Cacao Bliss or 100% unsweetened cocoa powder, one-fourth cup
- Baking soda, 1 1/2 tablespoons
- Baking powder, 1 1/2 tablespoons
- 1/2 teaspoon vanilla essence and 1/4 teaspoon salt
- 1.5 tablespoons of peppermint oil
- 1 tablespoon maple syrup without sugar
- 2 eggs
- 14 cups of chocolate chips without sugar
- 1/4 cup monkfruit sweetener blend (if using Cocoa Powder)
Instructions
- Step 1 of directions: Pre-heat
- Set the oven to 350 degrees Fahrenheit.
- Melt the chocolate in step two.
- The dark chocolate should be melted by heating it in a double boiler or in the microwave at 30-second intervals, as appropriate. Once you’ve smoothed out the mixture, add the coconut oil. Set apart for cooling.
- ACTION 3: Obtain a medium bowl.
- In a medium basin, mix baking powder, Cacao Bliss/cocoa powder, baking soda, salt, and almond flour.
- Add vanilla and peppermint in Step 4.
- Add sugar-free maple syrup, vanilla and peppermint extracts, and chocolate to the mixture. Mix well. Next, incorporate the dry ingredients.
- Get the eggs and chocolate in Step 5.
- Add eggs and sugar-free chocolate chips, and blend thoroughly.
- STEP 6: Add the dough to the baking sheet.
- Scoop out a tbsp. of cookie dough. (on a baking sheet covered with parchment paper)Set. Cookies should be spaced about one inch apart. If desired, press the surface flat with the back of a spoon. 10 minutes of baking at 350 degrees.
- Allow cooling in step seven.
- Remove cookies from oven. Let them cool on the baking sheet for ten minutes.
Transfer to a wire rack next.
