For about a decade now, I’ve been making this keto cereal and my family loves it.

Ingredients

Cereal:

  • 1 cup almond flour
  • ½ cup shredded coconut/flax seed meal
  • ⅓ cup Swerve Sweetener
  • 2 teaspoon ground cinnamon
  • 6 tablespoon butter chilled and cut into small pieces

Cinnamon Sugar Topping:

  • 1 tablespoon Swerve Sweetener
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 300F and with parchment paper, line a large baking sheet .
  2. Combine the almond flour, coconut, sweetener and cinnamon in the bowl of a food processor.
  3. To combine, pulse a few times.
  4. Over the mixture, scatter the butter pieces and until it resembles coarse crumbs, pulse .
  5. On prepared pan, spread the mixture and cover with another sheet of parchment/waxed paper.
  6. So that the cereal sticks together, use a rolling pin or your hands to press down firmly. Remove the top sheet of paper and until it gets golden brown, bake TWENTY to THIRTY minutes.
  7. Combine the topping ingredients while baking in a small bowl. Sprinkle after removing from oven, over the cereal immediately . (it will crisp up as it cools)Let cool completely on pan and then break into small pieces.
