Keto Chicken Chowder is a very delicious and creamy dish. It has been made with smoky chipotle which is basically a smoked jalapeno and it is keto-friendly. You can make your own Chipotle at home or buy from the store by reading the label. This chicken chowder is made with fresh chicken or even with leftover shredded turkey. I make this chicken chowder with turnips instead of mashed potatoes and add more chicken to make it high in proteins. This Keto Chicken Chowder only takes thirty mins to prepare. With only 5.3g of net carbs, this chicken chowder is also low in carbs & high in protein with 27.6g of proteins.

INGREDIENTS:

  • 4 slices of chopped bacon
  • ¼ cup chopped onion
  • 1 large turnip
  • 2 pieces of garlic
  • 1 tsp. cumin
  • 3 cups of chicken broth
  • 1 ½ lb. boneless & skinless chicken thigh
  • ½ tsp. salt
  • ½ tsp. ground pepper
  • 1 cup heavy cream
  • 4 ounces of cheddar cheese
  • 2-3 chipotle peppers minced
  • ½ tsp. of glucomannan
  • 2 tbsp. fresh cilantro chopped

INGREDIENT NOTES:

BACON:

  • I use chopped bacon in my chicken chowder to cook it evenly in the dish.

TURNIPS:

  • A turnip is low in carb vegetable; and is perfect to use in place of potatoes in the chicken chowder. Rutabaga and radish are also utilized as a low-carb vegetable in the dish.

ONION:

  • I use a small quantity of onion to make this chicken chowder so it doesn’t affect the carb count of the recipe.

GARLIC:

  • The use of freshly minced garlic to make the dish will enrich the flavor of the chicken chowder.

CHICKEN:

  • Chicken is used without bones & skin to make this chicken chowder; we can also use leftover turkey to make this chowder recipe.

INSTRUCTION:

  1. Take a saucepan (large) and add the bacon to the pan.
  2. Cook the bacon till it gets crisp from both sides.
  3. Put the bacon on the paper towel.
  4. Include the onion turn it in the pan and cook it till it gets soft for about five minutes.
  5. Include the garlic and cumin in the pan and cook it till it gives a nice aroma.
  6. Pout the chicken broth in the pan and wait for the broth to get a boil.
  7. Adjust the heat to sim and cook it for ten mints.
  8. When the chicken gets tender, sprinkle salt & pepper to taste and mix it.
  9. Include the cream, cheese, and chipotle in the pan cook them till the cheese melts, & mix them completely.
  10. To adjust the smooth consistency of the chicken chowder mixes the glucomannan with the whisk.
  11. Pour the chicken chowder into the bowls and add slices of bacon and cilantro on top.
