STRAWBERRY COCONUT CREAM KETO POPSICLES. Into a creamy and tasty popsicle, strawberries and coconut are blended!
The perfect time to indulge in these sweet frozen treats as summer is just around the corner! The perfect combination in these popsicles, is fresh strawberries, thick coconut cream, and flaked coconut.
You will be making them all summer long because these are so refreshing and satisfying!
How To Make
So that the cream separates from the water, refrigerate the can of coconut milk overnight.
Scoop out the (should be thick and creamy)coconut cream and put coconut water aside.
Add the strawberries, ONE tablespoon of swerving to the bowl of a food processor, and puree. Add the ¼ cup of swerving, heavy cream, and coconut milk and blend until it gets creamy. Add some of the reserved coconut water if the mixture is too thick.
Add the flaked coconut and (you still want some texture)pulse just a few times. Remove and with a spout for pouring, transfer to a bowl.
Into popsicle molds, pour the coconut cream mixture.
Freeze for at least THREE hours.
