  • 5 tbsp. olive oil
  • 2 packages frozen tricolored pepper & onion medley
  • 1 can no-salt-added chickpeas
  • ½ tsp. salt
  • 2 tbsp. aged sherry vinegar
  • 1 tsp. garlic powder
  • 1 tsp. ground fennel
  • 1 tsp. smoked paprika
  • ½ tsp. ground black pepper
  • 1 tbsp. parsley

INGREDIENT NOTES:

CHICKEN SAUSAGE:

  • We have to utilize the hot Italian chicken sausage to include the flavorful and protein-rich taste in the dish. You could add the sweet or mild Italian chicken sausage instead if required. Remove the casings if using loose sausage, or slice the links into bite-sized pieces.

PIEROGIES:

  • Add the frozen four-cheese and potato pierogies to include the creamy and cheesy center, and they turn lightly crisp around the edges when roasted. We don’t have to thaw them first, so they keep their shape nicely.

OLIVE OIL:

  • Add the extra-virgin olive oil to help the pierogies, vegetables, and chickpeas brown nicely while adding richness to the dish. We have to divide the oil properly so all the ingredients get coated without making the dish greasy.

PEPPERS AND ONIONS:

  • We have to utilize the frozen tricolored pepper and onion medley to make the dish convenient and flavorful. It adds sweetness, wonderful color, and good texture to the dish without requiring much preparation.

CHICKPEAS:

  • Add the chickpeas to include protein and fiber in the dish while offering a pleasant roasted texture. We have to rinse and drain them properly before adding them to the sheet pan.

SHERRY VINEGAR:

  • Add the aged sherry vinegar to include acidity and balance the rich taste of the sausage, cheese, and olive oil. It also gives the dish a bright and savory flavor.

SEASONINGS:

  • We have to utilize the garlic powder, ground fennel, smoked paprika, salt, and black pepper to include the savory and flavorful taste in the dish. These seasonings pair nicely with the Italian-style sausage and roasted vegetables.

PARSLEY:

  • Add the fresh flat-leaf parsley to include the wonderful aroma, fresh flavor, and herbaceous taste. Sprinkle it over the dish just before serving for a fresh finish.

INSTRUCTIONS:

  1. First, we have to pre-warm oven to 220 °C & put the parchment on the tray.
  2. Now slice the sausage links into very small pieces, then add them to a big vessel.
  3. Include the frozen medley, pierogies, and chickpeas in the vessel.
  4. Then include the olive oil & seasonings in it and mix properly to coat them.
  5. Add the mixture to the pan in one layer and spread equally.
  6. Now roast the dish for twenty minutes, then turn the sides of the items and roast for another ten to fifteen minutes till pierogies & sausages are cooked and golden.
  7. Add the vinegar & olive oil to the small vessel and whisk it, then drizzle the mixture on the sheet pan and mix softly.
  8. Add the paprika and parsley on top and serve the dish.
