Today I want to share with you the ultimate KETO GLUTEN-FREE TIRAMISU . It is delicious, it is a frustration killer, it is super tasty and it is GLUTEN-FREE! It’s is very easy and quick to make! A cake that can be made in the morning for the evening, in short, is perfect.

Ingredients
For the sponge fingers
- 3 eggs
- 50 g of almond powder (1.75 oz)
- 1/4 tsp baking soda
- (equivalent to 50g of sugar) 1 tsp liquid sweetener
- 150 ml of strong coffee
For the cream
- 260 g of mascarpone (9.17 oz)
- 100 g of cream cheese (3.5 oz)
- (equivalent to 50g of sugar) 1 tsp liquid sweetener
For the topping
- 1 tsp 100% cocoa powder
- 1 tsp almonds in small pieces
Instructions
- Preheat the oven to 210 °.
- From egg yolks, separate egg whites.
- Beat the egg whites. Put it aside.
- To the egg yolks, add the sweetener and until the mixture become pale yellow, whip.
- Put baking soda, mix, then put almond powder and mix well.
- Gradually, to the yolks, add the whipped egg whites.
- Into a pastry bag, pour the mixture and on baking paper, spread the dough with shapes of fingers.
- Bake Ten to Twelve minutes.
- Take them out and let cool.
- Then, whisk the sweetener (1tsp), the Cream Cheese and the Mascarpone.
- Spread a small portion of the Mascarpone mixture on a plate, then place biscuits dipped in coffee and add over a layer of mascarpone mixture. Until you have no biscuits left, continue. To put on the sides of the cake, keep enough mascarpone mixture.
- With a some almonds pieces and some cocoa powder, sprinkle the cake.
- Refrigerate for at least Six hours.
- Serve and enjoy!
