Ingredients
- 1½ cups shredded mozzarella cheese(low moisture)
- at room temperature, 4 ounces cream cheese, divided
- 1 large egg
- divided, 6 tablespoons Swerve Brown,
- 1½ – 2 cups finely ground almond flour
- ½ teaspoon baking soda
- ½ teaspoon kosher or fine sea salt
- non-stick cooking spray Gluten-free
- at room temperature 4 tablespoons butter,
- 1 tablespoon ground cinnamon
- ½ cup finely chopped pecans
- 3 tablespoons melted butter
- ½ cup Swerve Confectioners
- 2 teaspoons pure vanilla extract

Instructions
In a microwave-safe bowl, place the mozzarella and 2 ounces of cream cheese. For ONE minute, microwave, stir, and then for another minute, microwave, Stir, if the cheeses aren’t smooth, microwave and until it gets smooth, stir in THIRTY-second increments. Until it gets blended, add the egg and mix. Add 2 tablespoons of salt, 1½ cups almond flour, baking soda, and Swerve Brown. Stir well. Mix until it gets thoroughly combined. Add more almond flour if the dough seems too wet, a little at a time. The dough should be slightly smooth and sticky.
With cooking spray, spray a piece of parchment paper. On top, place the dough and form into a rectangular shape. with cooking spray, spray another piece of parchment paper and place it on top. Until you get a rectangle, roll the dough approximately 14 by 10 inches, ¼ inch thick. Take out the top piece of parchment and in a baking dish(9 by 12), place.
With FOUR tablespoons of Swerve Brown and the cinnamon, mix the room temperature butter. Spread on top of the dough. On top, sprinkle the pecans evenly.
Roll the dough into a log using the bottom piece of parchment. Press the dough into shape after each turn. For FIFTEEN minutes, place the rolled dough in the freezer.
Preheat the oven to 400 degrees. Cut the chilled dough log into EIGHT equal-sized rolls using a sharp knife. In the baking dish, place on the parchment. Until it gets golden brown, bake for TWENTY FIVE minutes. The rolls will be a little soft, but as they cool, they will be firm.
Beat together the vanilla, remaining 2 ounces of cream cheese, Swerve Confectioners, and melted butter. Spread on top of the rolls.
