For this keto pulled pork, my family is absolutely bonkers. With a sweet and spicy kick, it’s so mouthwateringly tender. It takes only about half the time to make as it’s cooked in an Instant Pot.

Ingredients
- 3 to 4 lb pork butt
- Salt and pepper
- 2 tablespoon bacon grease
- 1 tablespoon chile powder
- 1 teaspoon ground cumin
- One teaspoon garlic powder
- ¾ cup chicken broth
- 1 recipe Easy Sugar Free BBQ Sauce
Instructions
- With a clean rag, pat the pork roast dry, then for faster cooking, chop into large chunks. With salt and pepper, sprinkle generously all over.
- On to the saute function, turn the instant pot and add the bacon grease. Add half the pork chunks once melted and hot, and brown on all sides. Take out from pan and do samet with the remaining chunks.
- In the pot, place all the pork back and sprinkle with the garlic, cumin, and chili powder. Pour in chicken broth and seal lid(Make sure the vent is on seal).
- For FORTY FIVE minutes, set the Instant Pot to manual high. Once cooking is complete, for another 15 to 20 minutes, let the pressure release naturally.
- To a large bowl, transfer the pork and shred with two forks. Put BBQ sauce and toss to combine. Season with additional salt and pepper.
