Ingredients:
- 4 medium zucchinis, sliced lengthwise into thin strips
- 1 pound ground beef
- 1 cup ricotta cheese
- 2 cups marinara sauce (sugar-free and low-carb)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1 egg
- 1 tablespoon olive oil
- TWO cloves garlic, minced
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 375°F.
- Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook for 1 minute.
- Add the ground beef to the skillet and cook until browned, breaking up any clumps with a wooden spoon.
- Add the marinara sauce to the skillet and stir to combine with the beef. Reduce the heat to low and let simmer for 5-10 minutes.
- In a mixing bowl, combine the ricotta cheese, egg, parmesan cheese, salt, and pepper.
- Take a slice of zucchini and spread a tablespoon of the ricotta mixture on one side. Top with a spoonful of the beef and marinara mixture.
- Roll up the zucchini slice and place seam-side down in a baking dish(9×13 inch).
- Repeat steps 6 and 7 with the remaining zucchini slices and filling.
- Top the zucchini rolls with the shredded mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
- Let it get cool for a few minutes.
- Serve!
