INGREDIENTS
Fruit pizza base: Sugar cookie
- almond flour, 1 cup
- a third cup of coconut flour
- 1/2 teaspoon baking powder
- One big egg
- 1/3 cup of sweetener in powder
- softened 1/3 cup unsalted butter
- 1 teaspoon vanilla extract
Buttercream Frosting:
- Softened 1/2 cup full-fat cream cheese
- THREE tbsp. butter(softened unsalted)
- Light whipped cream, 1/2 cup,
- 1/4 cup of sweetener in powder
- Vanilla extract, 1 teaspoon
Toppings:
- 1/cup of raspberries
- 1 cup of cut strawberries
- Blueberries, 2/3/cup
Instructions
- With parchment paper, line baking sheet .
- Preheat the oven to 350°F. Put aside.
- Take a bowl(big) and mix baking powder, powdered erythritol, coconut flour, and almond flour.
- Mix together softened butter, egg, and vanilla extract using a silicone spatula. Mix until a batter that is slightly thick and sticky forms.
- Flatten the dough into a sizable (10 inch) circle after transferring it to the baking pan.
- Until brown, bake for 12 to 15 minutes in a preheated oven.
- Take a bowl(big) and mix(electric mixer) all the icing ingredients until they are smooth and creamy.
- Take it out of the oven. Let it cool.
- After it gets cooled, spread the cream cheese filling on top of the crust.
- Add strawberry, blueberry, and raspberry slices as decorations.
- Put it in the refrigerator . Let it chill for at least TWENTY mins.
- Slice into 12 pieces.
