I made this dish once more today to take pictures while Harper was waiting in the airport between calls and texts. What a wonderful diversion! Furthermore, fried rice is a fantastic comfort food.
This recipe was inspired by a fried rice recipe that I learned from a college friend. My friend made everything by ear and didn’t follow a recipe. Even easier to prepare than standard fried rice, in my opinion, is cauliflower fried rice. Rice doesn’t need to be prepared separately. I simply cook it in the same pan as the other vegetables.
I’ve used both fresh and frozen cauliflower rice to make this rice. Any option is effective. The frozen cauliflower doesn’t need to be defrosted before use. Additionally, you can learn to make cauliflower rice.
Pre-riced Cauliflower
Finding pre-riced cauliflower is becoming more and more straightforward. I suppose all of us low-carb dieters are exerting more pressure on stores to stock items that are beneficial to us! Good work, everyone! Even at my neighborhood grocery store in the country, I discovered it in the frozen food section as well as the produce section. You can rice cauliflower yourself using a grater or a food processor if you can’t find it already riced.

Ingredients
2 tablespoons of coconut oil, olive oil, ghee, or butter
1/2 ounces fresh or frozen riced cauliflower
1/4 cup of diced carrots (optional)
1 ounce of sliced green onions, white and green parts separated (approximately 2 large or 4 small).
crushed two garlic cloves
1 large beaten egg
2 tablespoons Tamari or soy sauce without gluten
Toasted sesame oil, 1 teaspoon
Instructions
- Melt butter or your preferred oil over medium-high heat in a big, heavy skillet or wok.
- Incorporate riced cauliflower and carrots. For about FIVE minutes, cook, stirring occasionally.
- Add the green onions’ white part and mix well. About 2-3 more minutes of cooking will get the vegetables almost tender. Add the garlic, heat for one minute .
- Add the egg and combine it with the vegetables. Cook while frequently stirring the mixture until the egg is scrambled. This takes a minute or two.
- Add the sesame oil, green portion of the green onions, and soy sauce. To taste and season as necessary.
