It’s so satisfying that out of just a bowl of the low carb cauliflower puree we can make a keto meal ,and nothing else.
Some people don’t even LIKE pepperoni but we threw some shredded mozzarella and pepperoni into out magic bullet with the cauliflower, and blended it into a puree.
It was SO GOOD!
Ingredients
For the Puree
- 4 cups cauliflower florets
- 2 Tbsp Heavy Cream
- 1 Tbsp Butter
- 8 slices pepperoni
- 1/4 cup shredded mozzarella cheese
- salt and pepper to taste
For the Casserole
- 12 slices pepperoni
- 1/2 cup shredded mozzarella cheese
Instructions
For the Puree
- Cauliflower should be cleaned and trimmed. Break it into medium sized pieces.
- Take a microwave bowl and put two tbsp. of cream and one tbsp. of butter.
- Microwave, uncovered, on high for ten mins.
- Stir to coat cauliflower with cream mixture.
- Microwave for another 6 mins on high.
- Take it out from the microwave and into a high speed blender, put it along with the 1/4 cup mozzarella cheese and eight slices of pepperoni.
- Puree until it gets smooth.
- To taste, season with pepper and salt.
- To your preference for consistency, you can adjust the butter and cream.
For the Casserole
- Into an 8 x 8 oven proof casserole dish, spread the cauliflower puree.
- Layer with pepperoni, and cover with 1/2 cup shredded mozzarella cheese.
- For twenty mins, bake at 375 degrees (F).
- Microwave this for five minutes, alternatively.
- Serve hot.
